If you really want to save some vegetable varieties from going extinct have a go at heirloom vegetable gardening

Heirloom vegetable seeds are seeds that have open pollinated therefore they have not been genetically modified. They are the seeds your grandparents grew. And since modern oil based

farming only favors a few varieties of seeds the way to save varieties of vegetables from ending up on the endangered list is to try heirloom vegetable gardening. 

There are many varieties of heirloom vegetables and since home vegetable gardening is becoming increasing more popular heirloom vegetables are making a comeback. 

Which is a good thing, as we need more vegetable varieties. When you start turning your lawn into vegetables stick to the tried and trusted vegetables you already know, because that way you and your kids will eat them. And when you want something new then it is time to throw in some heirloom vegetables. So you can add some variety to your garden and you never know your kids might just like them. 

Growing heirloom vegetables is the same as growing all vegetables and after they are ripe and ready to eat, save the seeds or let them go to seeds. 

Then give them to other gardeners who want to try them out. To buy heirloom vegetables just go to your local farmers market buy the vegetable and plant the seed. If it is an early vegetable you should plant the seed and get a second crop before the winter sets in. Or just keep the seed till next season. As more and more lawns are turned into vegetables heirloom vegetable gardening will become more and more popular.
